Recipe of the first sea buckthorn jam developed at the University of Warmia and Mazury

Researchers from the Department of Chemistry and Raw Materials Processing of the University of Warmia and Mazury in Olsztyn are co-authors of the original recipe for sea buckthorn and carrot jam. The jam won the gold medal at this year’s World Food Warsaw Fair.

The jam recipe was established last year at the request of the company “Szarłat”, which has an experimental field of sea buckthorn and deals in the processing of this fruit. The product has been developed by Dr Eng Beata Piłat and it is the first jam on the market in which sea buckthorn is the main ingredient.

Dr Eng Pilat devoted a few years of scientific work to the sea buckthorn. She is a co-author of two patents related to the processing of this plant, including a patent for the preparation of a phospholipid-carassinode preparation from sea-buckthorn berries.
