Researchers of University of Environmental and Life Sciences in Wrocław to work out recipes for pro-healthy bread

Professor Monika Bronkowska from the Department of Human Nutrition at the University of Life Sciences in Wroclaw wants to develop food products with health-promoting features. The project will be implemented under the Municipal Support Program for Higher Education and Science Partnership and Economic Activity Sector – “Mozart”.

Modifications to the recipes of traditional bread will have a huge impact on the construction of diets particularly in Poland. The project regarding the development of new bread recipes will be implemented jointly with the Piekarnia Familijna (bakery) from Kuźnica Cieszycka.

– Our joint project is to develop and implement recipes for new products with health-promoting features, i.e. low index and glycemic load. Improving the nutritional value and functional features will bring measurable benefits to all parties, and will also improve the quality of life, as well as rationalization of nutrition for the inhabitants of Wrocław and Lower Silesia – says Prof. Bronkowska.
