Discovery of scientists of the Krakow University of Technology to facilitate the storage of vegetables and fruit

The magazine “Journal of Cleaner Production” presented the effects of the work of Polish chemists, which can facilitate the storage of fruit and vegetables. The team is headed by Dr Eng. Radomir Jasiński, Faculty of Chemical Engineering and Technology of the Krakow University of Technology.

Polish chemists have developed a universal and ecological method of synthesizing compounds that are precursors for preparations that inhibit the ripening of fruits and vegetables. This solution may become the basis for the production of useful preparations.

The research of scientists, students and doctoral students of the Krakow University of Technology is the first but extremely important step towards the production of useful preparations that inhibit the ripening of fruits and vegetables.

Unlike ethylene, which is a common maturation accelerator, methylcyclopropene and its analogs inhibit the maturation process. This can help to solve the problem of storing vegetables and fruits, especially in large amounts. This is one of the challenges before modern science.
