Wrocław University of Life Sciences to create recipes for health-enhancing beverages

Dr Karolina Rak from the Department of Human Nutrition at Wrocław University of Life Sciences will develop recipes for health-promoting drinks based on oat milk with mixed spices. According to the researcher herself, this project is a nod to tradition, and the inspiration for the research was the so-called ‘golden milk’, i.e. hot milk with butter, honey and spices served when suffering from a cold.

The researcher will use oat milk, which, compared to cow’s milk, has a much more favourable nutritional profile, and a mixture of ground cloves, cinnamon and turmeric.

Spiced oat milk beverages will be tested for their antioxidant and immunomodulatory properties. The preliminary results will form the basis for further research – already involving consumers, who will not only evaluate the taste of the different oat milk drink variants, but will also be tested for the impact of their consumption on their health.
