Dr Karolina Tkacz from Wrocław University of Life Sciences has won the Prime Minister’s Award for an outstanding doctoral dissertation making a significant contribution to the development of Polish science in the disciplines of biological sciences and food technology. She was recognised for her dissertation, which focused on the design of foods with targeted health-promoting potential.
The laureate conducted the first comprehensive research on the composition of hydrophilic and lipophilic bioactive compounds of sea buckthorn berries, shoots, leaves and juice. Her research proved the anti-inflammatory, anti-diabetic and antioxidant potential of the plant’s unique composition of bioactive compounds.
Dr Tkacz’s research included a wide aspect of practical application and technological innovation – the scientist developed methods for bioprocessing sea buckthorn berry juices, which is an original solution for reducing the acidity of juices and simultaneously increasing their health-promoting potential.
