University of Warmia and Mazury scientists discover healthy cheese

Researchers from the Faculty of Food Sciences of the University of Warmia and Mazury in Olsztyn are working on the recipe for a new ripening cheese. The product is to be healthy and intended for people struggling with civilization diseases.

A dozen or so recipes of ripening and curd cheeses have been developed in the Olsztyn university laboratories, including the well-known Kortowski cheese. This time, work on the cheese for people with heart and diabetes problems is underway.

According to the University of Olsztyn, the cheese recipe developed by scientists from the Faculty of Food Sciences is in line with the latest trends in food production technology.

– Nowadays, it’s trendy that dairy products are placed to specific groups of consumers. And we want to respond to the needs of the market, which demands that food products also should have pro-health properties. Our cheese with increased content of casein beta should interest to people with cardiovascular disease, at risk of heart attack- emphasizes Dr Justyna Żulewska, who develops the technological process of producing a new cheese.
