Scientists from the University of Life Sciences in Poznań receive the Polish Intelligent Development Award

The project implemented by scientists from the Faculty of Food Sciences and Nutrition at the University of Life Sciences in Poznań in cooperation with Przetwórnia Gil won the Polish Intelligent Development Award 2021 in the category “Innovative technologies and future research”.

Scientists were awarded for the project “Development of technologies for innovative semi-finished products and fruit products based on physical and diffusion methods of processing and preservation, taking into account the aspect of clean label and pro-health values”. The essence of the project, financed by the National Center for Research and Development, is the use of a modern method of vacuum soaking the fruit tissue in the process of its processing.

This technique eliminates additives from the process, e.g. allergenic sulfur compounds used to reduce oxidative changes. The advantage of the products obtained in this way is a clean label, functionality and increased content of compounds with pro-health potential.
